Pumpkin French Toast Casserole

Overnight Pumpkin French Toast Casserole is a fall favorite with pumpkin flavor, maple, and brown sugar sweetness. Easy to make and a crowd-pleaser!

Ingredients

For The Casserole

  • 12-16 ounce loaf brioche bread 1-2 days old, cubed
  • 6 eggs, beaten
  • 2 cups milk
  • 1 cup pumpkin puree
  • ⅓ cup maple syrup (+ extra for serving)
  • ¼ cup heavy cream
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon coarse kosher salt
  • 1 cup chopped pecans

For The Streusel Topping

  • 1 cup all-purpose flour
  • 6 tablespoons unsalted butter, softened
  • ½ cup light brown sugar
  • ¼ cup white granulated sugar
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon coarse kosher salt

Instructions

  1. If your bread is not 1-2 days old, let it lay out uncovered on the counter for 2-24 hours. *See the notes below if you don’t have time to do this. 
  2. Coat a 9x13 baking dish with nonstick spray. Set aside. 
  3. In a large bowl mix the eggs, pumpkin, syrup, cream, pumpkin pie spice, vanilla, and salt until combined. 
  4. Transfer the cubed bread to the baking dish. Pour the custard mixture over the bread. 
  5. Cover and place in the fridge for at least 2 hours. Overnight is best. 
  6. Preheat the oven to 350° F.
  7. Add all the streusel toppings to a bowl. Mix with a fork or clean hands until combined. 
  8. Cover the casserole with the pecans and streusel topping. 
  9. Bake for 30 minutes or until the streusel is golden brown.
  10. Serve immediately with a drizzle of maple syrup.
