National Pork Month with Costco

Did you know that October is National Pork Month? We cook a lot of pork in our house, because it’s affordable, versatile and everyone in our family loves it!
The National Pork Board and Costco have joined together to celebrate National Pork Month by giving their shoppers special savings on pork all month long. Starting tomorrow (Oct 24, 2011) you can save $2.50 off a package of Rack of Pork in through October 31. Its the perfect time to gather around the family dinner table with tasty pork dishes.

Online Recipes and Tips
I was so impressed with Costco’s meat department and was thrilled to discover online Costco’s “In The Warehouse”. They provide flavorful recipes and tips for preparing each week’s featured cut of pork. SCORE!! I need all the help I can get when it comes to dinner ideas!

Pork Temperature Guidelines
In May, the USDA reduced the temperature guideline for pork loins, chops and roasts from 160 to 145 degrees F, with a three-minute rest. This will yield a juicy, flavorful product that may be pinker in color than most home cooks are used to. Ground pork, like all ground meat, should be cooked to 160 degrees. Use this chart as a guideline for cooking times.

We eat much more pork than beef for the last few years (I hate the added hormones in beef) and we have it several times a week. Pork loin chops are my favorite; we had them for supper last night. I bake them (1-1/2″ thick) at 350 for two hours and they are so tender you can cut them with the side of a fork. I bread them with seasoned Panko bread crumbs, cook for 90 minutes covered tightly in foil and then I add a mixture of cream of mushroom soup/half and half to the pan and bake for another 30-40 minutes.
I also love a nice pork loin cooked in the crock pot, and I’ve started making my spaghetti sauce with ground pork instead of ground beef. It’s wonderful.

I LOVE Costco. I used to work there when I was in college. It’s a really great company to work for and shop :O)
I love my hubby’s pulled pork sandwiches. He cooks the pork in the crockpot covered with beer, then pulls it out, drains & shreds it, then puts it back in the ‘pot with our fav. bbq sauce to heat thru for another hour. So easy and SO good. I also love Costco, they have great meat at great prices. Until we raised our own, that’s where we bought all our meat!
Do we eat pork? Haha…just a little;) We actually by our pork from our neighbor. He raises over 20,000 pigs a year. We butcher our pigs and buy more at places like costco, sam’s club, and other grocery stores. Some of my favorite pork recipes are Pork Fajitas and Crock Pot Apple Stuffing Pork Chops.
We don’t eat much pork… except for bacon! BUT we did have a Smoked Pork Shoulder this weekend… didn’t know it was Pork Month, good to know!
I don’t like pork, but I do like ribs! Dave smokes them and they are so yummy! We enjoy Costco also, however their pizza isn’t as good as Sam’s. That’s a bummer!
