⬇️ RECIPE:

Ingredients

½ cup softened unsalted butter
½ cup white granulated sugar (+ 3 tablespoons to sprinkle on top)
⅓ cup packed light brown sugar
1 large egg, room temp
1 egg yolk, room temp
1 teaspoon vanilla extract
1 cup all-purpose flour (120 g)
1 teaspoon ground cinnamon (+ 1 ½ tsp for topping)
½ teaspoon baking soda
½ teaspoon cream of tartar
¼ teaspoon coarse kosher salt

1. Using an electric mixer beat the butter, sugars, eggs, and vanilla until well combined.
2. Add the dry ingredients to the wet ingredients and stir briefly until the dough forms.
3. Spread the cookie dough into the prepared 9x9- inch pan and sprinkle with cinnamon-sugar mixture.
4. Bake in preheated 350° oven for 20-25 minutes until the edges are set and the center is still soft. Don’t overbake.
5. Allow the bars to cool completely (at least 1 hour) before serving

Ingredients
3 ounces apple cider
2 ounces bourbon
1/2 teaspoon lemon juice
2 ounces ginger beer or ginger ale
apple slice, thyme sprig and cinnamon stick for garnish

Fill a cocktail shaker with ice. Add cider, bourbon and lemon juice. Shake for 30 seconds and strain into ice-filled rocks glass. Top off with ginger beer.
