Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 egg, room temperature
  • 2 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 3 tablespoons vanilla instant pudding mix
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-2 teaspoons milk
  • 1 cup M&M's chocolate candies
  • (optional) flaky sea salt for sprinkling on cookies
  • (optional)extra M&M's for pressing on top of cookies

Instructions

  1. Line baking sheets with parchment paper or a silicone baking mat.
  2. Using a large bowl and an electric mixer on medium-high, cream butter, granulated sugar, and brown sugar together until fully, about 1 minute. Add the egg and vanilla and continue mixing until combined.
  3. Slowly add the flour, pudding mix, baking soda, and salt and mix on low until well incorporated. If the mixture seems dry add 1-2 teaspoons of milk. Fold in the M&M's.
  4. Scoop out 2 tablespoon portions of dough and roll into balls and place on prepared baking sheet about 1-2 inches apart. Chill for about 30 minutes in the refrigerator before baking. (see NOTES)
  5. Preheat oven to 350° F. Bake cookies on center rack for 8-10 minutes or until the edges are slightly golden. Remove from the oven and sprinkle with flaky salt if desired.
  6. Allow cookies to cool on the pan for 5 minutes and while still warm gently press a few M&M's on the top of the cookies (to make them look like they are from a bakery). Transfer to a wire rack to cool completely.

Notes

Store in an airtight container on the counter for up to one week.

Chilling the cookie dough is optional, but makes for a better cookie! You can refrigerate the dough in the bowl for up to 72 hours but you will want to set it out to soften a little to make it easier to scoop and roll the cookie dough.

You can use regular size or mini M&M's.

Option: you can also add 1/2-1 cup of chocolate chips if you'd like.
