Lemon Parmesan Tilapia

Ingredients

  • ½ teaspoon crushed red pepper
  • ¼ cup grated Parmesan
  • ¼ cup Panko
  • 2 tablespoons chopped parsley
  • 3 tablespoons melted butter
  • 2 tablespoons lemon juice
  • 2 cloves minced garlic
  • 2 teaspoons fresh dill
  • 4-6 tilapia fillets
  • salt and pepper
  • 2 tablespoons capers
  • 4-6 lemon slices

Instructions

  1. Preheat oven to 425° F.
  2. Using a small bowl, combine crushed red pepper, Parmesan, panko and parsley and set aside. In another bowl combine the butter, lemon juice, garlic and dill.
  3. Place the tilapia in a baking dish and season lightly with salt and pepper. Pour lemon mixture over fillets and sprinkle with panko mixture and capers. Add a lemon slice to the top of each fillet. Bake uncovered for 10-15 minutes or until fish flakes easily with a fork.
