This simple and delicious Garlic Roasted Shrimp takes almost no time to make and it's bursting with flavor. Making it the perfect party appetizer or quick healthy dinner idea.

Ingredients

  • 1½ pounds large shrimp peeled, deveined
  • 3-4 garlic cloves, minced
  • 1½ tablespoon olive oil
  • 1/2 teaspoon crushed red pepper flakes (1 teaspoon if you like spicy)
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 1 lemon, juice of
  • 2 teaspoons chopped parsley
  • cocktail sauce (if serving as an appetizer)

Instructions

  1. Preheat oven to 425°F. Spray a large baking sheet with cooking spray or line with parchment paper.
  2. In a large bowl toss shrimp with garlic, oil, crushed red pepper flakes, salt and pepper to coat. Arrange the shrimp on prepared baking sheet in a single layer.
  3. Roast shrimp for 8-10 minutes until no longer translucent.
  4. Squeeze lemon over the shrimp and garnish with parsley. Serve immediately with rice, pasta, on a salad or as an appetizer with cocktail sauce.
