With no exotic ingredients required, this creamy corn recipe takes five minutes to throw together for a delicious creamed corn dish! 

  • This slow cooker creamed corn is easy and flavorful using thawed, frozen corn. You can also use canned (drained), fresh sweet corn (stripped), or the added depth of grilled corn (smokey).
  • Use whole milk if you can, but use half and half for opulence in this creamy corn dish.
  • Parmesan cheese – fresh is best.
  • Diced Green Chiles add a touch of heat and zesty pepper notes. Go for mild if you are all about flavor, not heat. Green chiles are hotter with piths and seeds.
  • Garlic Powder, Salt & Pepper
  • Cream Cheese adds smooth, tangy richness to creamed corn and a velvety texture.

How To Make Slow Cooker Creamed Corn

You can also make this creamed corn in the oven if you don’t have a slow cooker! 

Step 1. Add everything except cream cheese and butter to the slow cooker and stir. 

Step 2. Top with cream cheese and butter (DO NOT STIR) and cook on high 2-3 hours.

Step 3. When the creamed corn is heated and cream cheese melts, stir and combine the mixture.

Step 4. Continue cooking for another 15-30 minutes.

Garnish with finely chopped fresh parsley and cracked black pepper before serving.

  • Extra topping ideas for creamed corn: Panko bread crumbs, shredded cheddar cheese, bacon bits, diced jalapenos, tabasco, diced onions, or tomatoes.
  • You can use frozen, canned, or grilled corn (we like roasted or grilled corn).  Trader Joe’s has an excellent frozen roasted corn! 
  • If you’re not using sweet corn you may want to add a teaspoon of sugar to this recipe.
  • If using canned corn, you should drain the corn.

How To Reheat & Store Creamy Corn

This creamy corn recipe lasts up to three days in the fridge stored properly. Want to watch it disappear? Leftover creamed corn is a fantabulous dip by adding shredded cheese, bacon bits, sliced green onions, and sour cream. Bring on the chips and loosen your waistband-it’s absolutely delicious!

If you want to reheat in the microwave, make sure you check and stir every 15-30 seconds after the first minute. You don’t want to overheat creamed corn and cause the dairy to break down.

I don’t recommend freezing creamed corn. The problem lies with the sauce, it’s mostly dairy which will often separate when frozen and then reheated.

The remaining bits and flavor-packed milk are extracted and cooked together. Viola! The original sweet creamed corn.

Can you overcook cream cheese corn?

If your creamed corn is overcooked and too thick, you can add a little hot milk as needed, and stir well to remove lumps.

Is canned corn the same as fresh corn?

Nutrition values for canned corn actually retain comparable nutrients to fresh corn according to a study from UC Davis in 2012. Vitamin intake per calorie consumed, canned corn and fresh corn had the highest values, both just slightly more than frozen corn.

Ingredients

  • 6 cups (32 oz) frozen corn, thawed (or canned, or grilled)
  • 1/2 cup milk
  • 1/2 cup shredded parmesan cheese
  • 4 ounces diced green chiles
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces cream cheese, cubed
  • 1/3 cup butter, sliced into tablespoons
  • optional: chopped fresh parsley for garnish.

Instructions

SLOWCOOKER:

  1. Combine corn, milk, parmesan, green chiles, and spices in a 3-quart slow cooker.
  2. Stir to combine. Top with cream cheese and butter cubes and DO NOT STIR. Cook on high for 2-3 hours until heated through and cream cheese is melted.
  3. Stir until cheese and butter are well combined. Continue cooking for another 15-30 minutes.
  4. Garnish with finely chopped fresh parsley and cracked black pepper before serving.

OVEN OPTION:

  1. Preheat oven to 350° F. Spray casserole dish with cooking spray.
  2. Add all of the ingredients to the prepared dish, stir to combine, and bake uncovered 30-45 minutes.
  3. Garnish with finely chopped fresh parsley and cracked black pepper before serving.
