This week has had an un-intentional theme to it.  Three posts have been about grilling, coconut, and lime or all three!!  Today’s Spark Your Summer post is from the talented Kimberly of a Night Owl Blog!  I have to tell you I was SO excited when I saw that she was going to share Dirty Coca-Cola Popsicles with us, because last year when the dirty diet coke craze was all over blog land, I thought they would make an awesome slushy or popsicle!  I mean Coke, with lime, coconut, and a little cream?!  who wouldn’t love that combo on a hot summer day?  Leave it to Kimberly, to do it!  You won’t want to miss all the creative ideas going on over on her blog!!

Hi TidyMom readers! Kimberly from A Night Owl here, and I am so excited to be sharing with you today! At A Night Owl we share crafts, recipes and more that can be done by anyone! Really – I truly am a night owl, working full time and have boys at home. So you can be SURE when you stop by, that whatever we’re sharing you can create as well! And today is no exception. We live in sunny Arizona, so come summertime we are obsessed with anything frozen, especially popsicles! And this may be one of my most favorite popsicle creations to date – “Dirty” Coca-Cola Popsicles!

What Is A Dirty Coke?

Have you heard of a “dirty” Coke? I’ve seen it countless times online, and while I’ve never seen it on the menu at any stores I go to, I had to try a recipe. It basically calls for Coca Cola (or Diet Coke), coconut syrup, and lime juice – with a little half and half if you’d like. Now I’m a BIG fan of coconut, so I figured that it would taste pretty good. So I gave it a try and yummm…the critics were right, so tasty!

And then the other week I had an epiphany – one of my favorite popsicles I created last Summer was our Coke Float Popsicles. I thought – I bet that a “dirty” Coke would make one fabulous popsicle as well! So I got to work. The process is about the same.

I’m actually MORE of a fan of Coca-Cola than I am Diet Coke (did I lose you yet? I don’t mean to offend). So this time I poured out a can of Coke into a measuring cup. Now the key to using sodas in a popsicle recipe is you have to let the fizz die down.

Once the soda had lost some of the fizz, I poured in 2 ounces of coconut syrup and squeezed in the juice of half a lime. If you want to get fancy at this point you can pour in an ounce or so of half and half. It’s not necessary, but if you like creamy popsicles it’s perfect!

Then just pour your “dirty” Coke into a popsicle mold and freeze. Keep an eye on your popsicles because especially if your soda was still fizzy they may expand outside of the popsicle mold. That’s why that first step is very important.

Once frozen, remove from your popsicle mold and you’ll have some seriously delicious popsicles. Seriously.

“Dirty” Coca-Cola Popsicles

Yield: 1 popsicle
Prep Time: 2 minutes
Freezer Time: 2 hours
Total Time: 2 hours 2 minutes

Dirty Coca-Cola Popsicles are the perfect summer flavor combo of Coke with a hint of lime, coconut and cream in a frozen treat!

Ingredients

  • 1 (8 ounce) can Coke or Diet Coke
  • 2 ounce coconut syrup
  • juice from 1/2 lime
  • optional: 1 oz half and half

Instructions

  1. Pour can of Coke or Diet Coke into a small bowl and let the fizz die down.
  2. Mix in coconut syrup, lime juice and half and half if desired.
  3. Pour mixture into popsicle molds and freeze.
