Blue Cheese Wedge Salad Crostini Appetizer

One of the best things about being a food blogger is connecting with some of the most amazing people that share a common love for food. So just like in real life, when there is an occasion to be celebrated, they all love to celebrate with food!

Just because we are not able to all meet and do this in person (wouldn’t that be a blast?!),  an incredible group of friends has come together to throw a virtual baby shower to honor our sweet friend, Aggie of Aggie’s Kitchen.

Most of the time, I would bring a dessert to a shower, but I know how important eating healthy, and fresh produce is to Aggie, so my first thought was salad………….but how about if I made that salad finger food?  That would make it more fun right?  Blue Cheese Wedge Salad Crostini

Let’s Make Blue Cheese Wedge Salad Crostini

If you’re not familiar with crostini, it’s basically Italian for “little toast”.  Perfect again, since Aggie is Italian!  It’s an Italian appetizer consisting of slices of crunchy toasted French or Italian bread with any variety of toppings.

I thought about how much I love homemade croutons in my salad, so why not serve a salad on a big crouton?  and what’s more simple than a blue cheese wedge salad?

Start by slicing a French baguette into 1/2 inch pieces.  Brush with olive oil and season with garlic salt.  If you have garlic infused olive oil, that would work wonderfully as well.   Arrange on a cooking sheet and place in 350° oven to toast, about 8-12 minutes.

Meanwhile, chop about 2 cups of iceberg lettuce, and quarter a handful of cherry tomatoes.  You could also cook a few slices of bacon, but I like to make things easy, so I used the pre-cooked bacon.

Toss it all in a bowl along with some crumbled blue cheese.  After the crostinis have cooled, dress the salad with just a tablespoon of blue cheese dressing.  Again, I wanted quick and simple, so I used bottled, but if you’d like to make your own, Heidi has a wonderful recipe for Blue Cheese Salad Dressing.

Top each crostini with the salad and garnish with a little green onion, if you like, and a bit of cracked black pepper.

There you have it.  A delicious appetizer in about 20 minutes or less.  Or, if you’re like me, these make a great little lunch! (scroll all the way to the end of this post for the full recipe)

Blue Cheese Wedge Salad Crostini

Yield: 12 crostinis
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes

Serve salad on crostini for the perfect party appetizer.

Ingredients

  • 12 slices of French baguette, sliced 1/2 inch thick
  • 2-3 tablespoons olive oil
  • garlic salt
  • 2 cups iceberg lettuce chopped
  • 8-10 cherry tomatoes, cut into quarters
  • 4 slices of bacon, cooked and chopped
  • 2 tablespoons blue cheese
  • 1 tablespoon blue cheese dressing
  • 3 green onion, chopped for garnish
  • cracked black pepper

Instructions

  1. Heat oven to 350°. Place baguette slices on baking sheet and brush with olive oil and season lightly with garlic salt. Bake until lightly toasted, 8-12 minutes. Remove from oven and let cool on baking sheet.
  2. Meanwhile, toss lettuce, tomatoes, bacon and blue cheese in a small bowl, then dress with blue cheese dressing.
  3. Top each slice of crostini with salad mixture, garnish with green onion and cracked black pepper.
  4. Serve immediately.

Notes

I used pre-cooked bacon and store-bought salad dressing to make this a super quick appetizer.
