I’m not sure why apple pie gets the reputation of being a fall dessert.  I could eat apple pie all year long!  Dutch Apple Pie is the best of two worlds, with it’s buttery flake pie crust AND crumb and streusel toppings.  It’s no wonder when Allison ran across a recipe for Dutch Apple Pie Cookies from Lovely Little Kitchen she knew they would be the perfect cookies to make for a fundraiser she was baking for.

These Dutch Apple Pie Cookies are made with store bought refrigerated pie crust, a nice little layer of apple pie filling topped with a buttery crumb struesel topping.  The perfect way to enjoy dutch apple pie with out making a whole pie!  Thank goodness most of them went to the fundraiser, because I’m sure I could have easily eaten my weight in these cookies!!

We had a little apple pie filling and crumb topping left over. We kept them, thinking surely we’d find something to do with the left overs.  Boy did we ever find something to make with the left overs.  I can’t speak for everyone, but apple pie only gets better when you add a big ol’ scoop of vanilla ice cream! am I right?

If you live in St. Louis, there’s no doubt you know about the iconic Ted Drewes Frozen Custard – (it’s a must do if you’re ever visiting St. Louis).  Ted Drewes is famous for their frozen custard, and in particular, their concretes.  A Ted Drewes concrete is handed to you upside down because it’s so thick. The custard is always vanilla, and you can add whatever flavorings and toppings you like. Some of the specialties are the Hawaiian (pineapple, macadamia nuts, coconut and bananas), the Dottie (light chocolate, macadamia nuts and mint), the Dutchman (roasted pecans, light chocolate and butterscotch), the All Shook Up (Reese’s peanut butter cups and bananas) and the Johnny Rabbitt (chocolate covered cherries).

My favorite at Ted Drewes for many years has been the Big Apple Concrete – frozen custard with a big slice of apple pie mixed in.

You can see where this is going, can’t you?…….. my Dutch Apple Pie Milkshake was born and it was every bit as good as I thought it would be!!

I added the cinnamon apple pie filling to some vanilla ice cream, along with just a splash of milk (the less milk, the thicker the shake).  After it was blended up, I added a few broken-up shortbread cookies (for the crust) and blended just until combined.  I wanted to have crunchy bites of the cookies, so I just wanted them mixed in.

After I poured the shake in to a glass, I topped with another spoonful of pie filling, drizzled with a little caramel sauce and sprinkled with crumb topping. – Garnished with straws and a shortbread cookie –which by the way, you could crush into the shake, but I used the shortbread cookie to scoop a few bites of the shake!!

Dutch Apple Pie Milkshake

Ingredients:

for crumb streusel

  • 1 cup flour
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/3 cup old fashioned oats
  • 7 tablespoons salted butter, melted

for milkshake

  • 2 cups vanilla ice cream
  • 1/4 cup milk (more for thinner shake)
  • 1 cup apple pie filling (canned or homemade)
  • 8 shortbread cookies (I used Lorna Dunes)
  • caramel sauce (for topping)

Directions:

  1. Using a small bowl, whisk together flour, sugars and oats, add melted butter and stir with a fork until crumbly and set streusel aside.
  2. Place ice cream, milk and 3/4 cup of pie filling in blender.  Cover and process until smooth.
  3. Break up 6 shortbread cookies and add to blender, cover and process just until mixed in.
  4. Pour into two tall milkshake glasses.  Top with additional pie filling, sprinkle with crumb streusel and drizzle with caramel sauce.
  5. Garnish with additional shortbread cookie and straws.  Enjoy!

for thicker shake, use less milk. For thinner shake use more milk. I like to add just a little milk at a time and blend, then add more milk, if needed, until I get desired consistency.
