Peanut Butter Pie | I’m Lovin’ It

Today’s I’m Lovin’ It  is to remind us all to celebrate those we love.

Make them peanut butter pie……

A few days ago, blogger Jennifer Perillo lost her husband Mikey to a sudden heart attack.  She wrote  a beautiful post, telling us one way we can help:

For those asking what they can do to help my healing process, make a peanut butter pie this Friday and share it with someone you love.”

Peanut Butter Pie

Prep Time: 10 minutes

Yield: 8

Peanut Butter Pie

Ingredients

  • 1 graham cracker or chocolate cookie crust
  • 1/2 cup Peanut Butter (chunky is best, but smooth will work too)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup milk
  • 8 oz Cool Whip

Instructions

  1. In a medium bowl, whip cream cheese until soft and fluffy.
  2. Beat in peanut butter and sugar.
  3. Slowly add milk, and blend thoroughly.
  4. Fold in Cool Whip.
  5. Spoon into pie crust.
  6. Freeze for several hours before serving.

Notes

If pie is frozen solid, you will need to let it sit out about 1/2 hour before serving. I also like to serve this pie cold, not frozen, both are good! garnish with chocolate syrup and/or chopped peanut butter cups.

Variations: If you don’t have Cool Whip, home made whipped cream would work just as well. When I use a graham cracker crust, I melt 1/2 cup chocolate chips and spread in the bottom of the crust, then layer peanut butter filling on top of chocolate layer. Replace peanut butter with Nutella for a great alternative!

Jennie and her family have been in my thoughts and prayers all week, I just can’t imagine what they’re going thru.

I don’t know Jennie personally, but it’s odd how blogging connects so many of us in ways we never imagined.  This post hits the nail on the head with how I think many of us are feeling

    ooooh my heart breaks….I WILL make a peanut butter pie tomorrow. Those little mini ones will be perfect here. Life is so precious, I know that living with a brain tumor – feeling/seeing the pain of those left behind here tears at my heart. We can not chose how long we are here, but we CAN chose how we live our lives and impact others. This is a great post Cheryl, your family is glowing and beautiful, so are you.

    This hits too close to home for me. At 40, Dave had a massive heart attack. His right coronary artery was 100% blocked. Somehow he survived and I thank GOD every single day. Abby was only 4 months old at the time.

    I am so sad for Jennie and am in tears thinking about what she is going through. It’s just awful.

    What a special way for everyone to reach out to her by making the Peanut Butter Pie.

    I’ll have to do that and also make Dave’s favorite oatmeal raisin cookies that I always say I’m going to make and never get around to it.

    I will keep Jennie and her family in my thoughts and prayers during this difficult time.

    Cheryl, you are so awesome. I’ve read your blog several times, and found out about other bloggers in need of a kind word, or extra love and support. You are amazing to support others the way you do, and I admire you for that.

    My heart goes out to Jennie and her family. I lost my dad when I was 15, and my mom was simply devastated. I can’t imagine going through that, as a wife now, and a mother. That video of him dancing with his daughter really got me chocked up.

    This is def a special tribute to him, and thanks to you, we can also participate in spreading the love.

    I can so relate to Jennie. My heart aches for her. I lost my husband, John 7 yrs ago in Feb and this week was his birthday. The tears are just about to ebb as I read her blog and know the pain she has and how every memory is bittersweet. My son, Logan and I will fix a peanut butter pie this week in honor of the love Jennie and Mikey shared. In fact, we may make 2 and share 1 with a friend to let them know how much we love them too. Prayers for the family.

    Such a difficult time for Jennie. I watched a friend deal with the sudden loss of her husband a few years ago. It’s heartbreaking.
